Kohlrabi has the attractive texture of a crisp apple with a mild Brassica flavour that hints of cabbage. Its crispness lends it well for use in salads with thick dressings. Shredded, it makes a delicious coleslaw. And like its Brassica cousins, kohlrabi is an excellent source of phosphorus and potassium as well as dietary fibre, and (somewhat surprisingly) vitamin C.
